  • Extra sliced strawberries and whole blueberries for garnish

Instructions

  1. Prepare the berries: Wash and dry berries thoroughly. In a medium bowl, combine sliced strawberries and blueberries. Sprinkle with 1 tablespoon granulated sugar and 1 teaspoon lemon juice. Gently toss to coat. Let sit for 10-15 minutes to macerate.
  2. Make the pudding base: In a large mixing bowl, whisk together the two boxes of instant vanilla pudding mix and 3 cups cold whole milk. Whisk vigorously for about 2 minutes until thickened. Set aside for 5 minutes to fully set.
  3. Whip the cream: In a separate large chilled bowl, pour in 2 cups heavy whipping cream. Using an electric mixer on medium-high speed, beat until soft peaks form (about 3-4 minutes). Add 1/4 cup powdered sugar and 1/2 teaspoon vanilla extract. Continue beating until stiff peaks form.
  4. Fold it together: Take about one-third of the whipped cream and gently fold it into the thickened pudding mixture using a rubber spatula. Then gently fold in the remaining whipped cream until just combined.
  5. Cube the cake: Cut the pound cake into 1-inch cubes if not already done.
  6. Assemble the first layer: Spoon about one-third of the creamy pudding mixture into the bottom of a trifle bowl. Spread evenly.
  7. Add the cake layer: Scatter half of the pound cake cubes evenly over the pudding layer. Press down gently.
  8. Add the berry layer: Spoon half of the macerated berries (with their juices) over the cake cubes.
  9. Repeat the layers: Add another third of the pudding mixture, then the remaining cake cubes, then the remaining berries.
  10. Top it off: Finish with the last third of the creamy pudding mixture. Spread to the edges of the bowl.
  11. Chill: Cover tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  12. Garnish and serve: Just before serving, garnish with fresh mint sprigs, extra sliced strawberries, whole blueberries, and white chocolate shavings if desired.

Notes

For best results, use cold heavy cream and chill the bowl and beaters before whipping. Macerating the berries is essential for flavor and moisture. The trifle needs at least 4 hours to chill, but overnight is ideal. Avoid using low-fat whipped toppings as they may deflate. For a gluten-free version, use gluten-free pound cake. For a dairy-free version, use full-fat canned coconut milk for whipped cream and dairy-free pudding mix.
