Instructions

  1. Mix dry ingredients: In a medium bowl, whisk together 2 ½ cups (315 g) all-purpose flour, 1 tsp baking powder, and ½ tsp salt. Set aside.
  2. Cream butter and sugar: Using an electric mixer, beat 1 cup (226 g) softened unsalted butter with 1 cup (200 g) granulated sugar on medium speed for 2-3 minutes until light and fluffy.
  3. Add eggs and extracts: Beat in 2 large eggs, one at a time, then stir in 2 tsp pure vanilla extract and optional ½ tsp almond extract.
  4. Combine wet and dry: Gradually add the flour mixture to the butter mixture, mixing on low until just incorporated. Avoid overmixing.
  5. Chill the dough: Wrap dough in plastic wrap and refrigerate for at least 1 hour.
