Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together 2 ½ cups (315 g) all-purpose flour, 1 teaspoon baking powder, and ¼ teaspoon salt. Set aside.
  3. Using an electric mixer, beat ¾ cup (170 g) softened unsalted butter and 1 cup (200 g) granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in 1 large room-temperature egg and 1 teaspoon pure vanilla extract until fully incorporated.
  5. Gradually add the flour mixture to the butter mixture, alternating with 2 tablespoons (30 ml) milk. Mix on low speed just until the dough comes together. Avoid overmixing.
  6. Wrap the dough in plastic and refrigerate for at least 30 minutes.
