  • Chicken thighs or breasts, skinless and boneless
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • Juice from 1 fresh lemon
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • Optional: carrots, celery, or peas for added nutrition

Instructions

  1. Place chicken thighs or breasts in a mixing bowl. Drizzle with olive oil and season with salt, pepper, and half of the minced garlic. Rub the mixture into the chicken to coat evenly.
  2. In another bowl, combine uncooked rice, chicken broth, remaining garlic, diced onion, and lemon juice. Stir well to coat the rice evenly.
  3. Spread the rice mixture as the bottom layer in the slow cooker. Arrange the seasoned chicken on top of the rice.
  4. Sprinkle fresh rosemary and thyme over the chicken. If using dried herbs, sprinkle evenly for balanced flavor.
  5. Cover the slow cooker with the lid and set it to low for 6-7 hours or high for 3-4 hours. Avoid opening the lid during cooking.
  6. Check for doneness: ensure the chicken is fully cooked (internal temperature should reach 165°F/74°C) and the rice is tender and fluffy.
  7. Fluff the rice with a fork, plate the chicken over the rice, and garnish with parsley or a lemon wedge if desired.

Notes

Use fresh herbs for the best flavor. Avoid opening the slow cooker lid during cooking to maintain heat. If the rice is too wet, let it sit uncovered for 10-15 minutes to absorb excess liquid.
