Instructions

  1. If desired, blend 1 cup small-curd cottage cheese in a food processor or blender for about 20 seconds until creamy.
  2. In a mixing bowl, combine 1 cup rolled oats, 1/2 cup almond flour, 1 tablespoon ground flaxseed (if using), and a pinch of sea salt. Stir well.
  3. Add the blended cottage cheese, 1/4 cup natural peanut butter, 3 tablespoons honey, and 1 teaspoon vanilla extract to the dry ingredients. Fold together with a spatula until a thick dough forms, about 2-3 minutes.
  4. Gently fold in 1/4 cup mini chocolate chips.
  5. Roll the dough into 1-inch balls using your hands or a cookie scoop and place them on a baking sheet or plate lined with parchment paper. You should get about 15-18 bites.
  6. Refrigerate the cookie dough bites for at least 30 minutes to firm up.
