Ingredients

Scale
  • 1 cup (226 g) unsalted butter, melted
  • 2 cups (400 g) granulated sugar
  • 3 large eggs, at room temperature
  • 2 tsp pure vanilla extract
  • 1 cup (125 g) all-purpose flour
  • 3/4 cup (65 g) unsweetened cocoa powder, sifted
  • 1/2 tsp salt
  • 1 cup (170 g) semi-sweet chocolate chips
  • 1/2 cup (113 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar, sifted
  • 23 tbsp (3045 ml) whole milk
  • 1 tsp pure vanilla extract
  • 1/2 cup (85 g) rainbow chips
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch pan lightly and line it with parchment paper, leaving some overhang for easy bar removal.
  2. In a large bowl, whisk together the melted butter and granulated sugar until combined and glossy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract until smooth and shiny.
  3. Sift together the flour, cocoa powder, and salt. Gradually fold these dry ingredients into the wet mixture with a spatula, careful not to overmix.
  4. Fold in the semi-sweet chocolate chips gently.
  5. Spread the batter evenly into the prepared pan using a spatula to smooth the top.
  6. Bake for 28-32 minutes until edges are set and slightly pulling away from the pan, and a toothpick inserted comes out with moist crumbs.
  7. Cool the brownies completely in the pan, about 1 hour at room temperature.
  8. Prepare the rainbow chip frosting by beating the softened butter until creamy (about 2 minutes). Gradually add powdered sugar, mixing on low speed. Add milk, vanilla, and salt, then beat on high until fluffy (3-4 minutes). Fold in the rainbow chips gently.
  9. Spread the frosting over the cooled brownies using an offset spatula or the back of a spoon.
  10. Cut into bars using a sharp knife, wiping it clean between cuts.

Notes

Ensure butter is fully melted but not hot when mixing with sugar to avoid cooking the eggs prematurely. Use room temperature eggs for smooth blending. Do not overmix the batter to keep brownies fudgy. Cool brownies completely before frosting to prevent melting. Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days. Frosting can be made a day ahead and re-whipped before use.
