  • 3/4 cup (90g) Italian breadcrumbs
  • 1/4 cup (25g) grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg
  • 2 cups (480ml) marinara sauce
  • 4 sub rolls
  • 8 oz (225g) mozzarella cheese, sliced or shredded
  • 2 tablespoons olive oil
  • Fresh basil or parsley (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, Italian breadcrumbs, grated Parmesan, minced garlic, and egg. Season with about 1/2 teaspoon salt and 1/2 teaspoon pepper.
  3. Mix gently until just combined; do not overwork the meat.
  4. Form the mixture into 16 evenly sized meatballs, about 1.5 inches (4 cm) in diameter.
  5. Heat olive oil in a skillet over medium heat. Brown the meatballs in batches for about 5 minutes, turning to brown all sides; they do not need to be fully cooked.
  6. Lower heat, add marinara sauce to the pan, nestle meatballs into the sauce, and simmer for 10 minutes. Add a splash of water if sauce thickens too much.
  7. Slice sub rolls lengthwise, leaving a hinge. Place 4 meatballs and sauce into each roll.
  8. Top each sub with about 2 ounces (55g) mozzarella cheese.
  9. Place assembled subs on a baking sheet and bake in the preheated oven for 8-10 minutes until cheese is bubbly and slightly golden.
  10. Garnish with chopped fresh basil or parsley if desired and serve hot.

Do not overmix meatball ingredients to keep them tender. Brown meatballs well for flavor and to seal in juices. Simmer gently in sauce to keep juicy.
