  • 4 cups corn Chex cereal
  • 2 cups rice Chex cereal
  • 2 cups mini pretzels
  • 1 cup salted peanuts (optional)
  • 1 cup toffee bits (such as Heath Bits-O-Brickle)
  • 1 cup unsalted butter, cut into chunks
  • 1 cup light brown sugar
  • 1/2 cup light corn syrup
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon flaky sea salt (for sprinkling)
  • Optional: 1/2 cup chocolate chips
  • Optional: 1/2 cup M&Ms or candy corn
  • Optional: 1/2 cup pecans or almonds

Instructions

  1. Line a large baking sheet with parchment paper or a silicone baking mat and set aside.
  2. In a large bowl, combine corn Chex, rice Chex, mini pretzels, salted peanuts, and toffee bits. Toss gently to mix.
  3. In a medium saucepan over medium heat, add unsalted butter, light brown sugar, and light corn syrup. Stir constantly until the butter melts and the sugar dissolves, about 3-4 minutes. The mixture should start to bubble gently.
  4. Continue to stir and cook for 2 more minutes until the toffee thickens and darkens slightly.
  5. Remove from heat and quickly stir in vanilla extract and baking soda. The toffee will foam up.
  6. Immediately pour the hot toffee over the cereal mixture. Using a heatproof spatula, gently fold until everything is evenly coated. Work quickly before the toffee sets.
  7. Transfer the coated mix to the prepared baking sheet and spread in an even layer. Sprinkle with flaky sea salt while still warm.
  8. Let cool for at least 20 minutes until the toffee firms up and the mix becomes crunchy.
  9. Once completely cool, break into bite-sized chunks. If adding chocolate chips or candy, toss them in after cooling.
  10. Serve immediately or store in an airtight container.

Prep all ingredients before starting the toffee for best results. For gluten-free, use gluten-free pretzels and check cereal labels. Work quickly when mixing toffee with cereal. Sprinkle sea salt while warm for best flavor. Store in an airtight container for up to 1 week or freeze for up to 2 months.
