  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley
  • Zest of 1 lemon
  • Salt and freshly cracked black pepper, to taste
  • 1 tablespoon olive oil
  • Optional: pinch of smoked paprika or red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C). Line your baking dish with parchment paper or lightly grease it with olive oil.
  2. In a small bowl, combine the softened unsalted butter with minced garlic, chopped rosemary, thyme, parsley, lemon zest, salt, and pepper. Mix until well incorporated.
  3. Pat the chicken breasts dry with paper towels. Lightly drizzle olive oil over them, then season both sides with salt and pepper.
  4. Spread a generous tablespoon of the garlic herb butter on top of each chicken breast. Optionally, lift the skin or make a small slit to tuck some butter underneath for extra moisture.
  5. Arrange the chicken breasts evenly spaced in the baking dish. Add any leftover garlic herb butter dolloped around the chicken.
  6. Bake for 22-25 minutes (about 20 minutes for smaller pieces) until the internal temperature reaches 165°F (74°C) or juices run clear and chicken feels firm but springy.
  7. Remove from oven and let rest, loosely covered with foil, for 5 minutes to allow juices to redistribute.
  8. Spoon any melted garlic herb butter from the pan over the chicken before serving.

Notes

If chicken starts browning too quickly, tent with foil halfway through baking. Avoid overbaking by checking at 20 minutes. Let chicken rest after baking to keep it tender. Use fresh herbs for best flavor; reduce dried herbs by one-third. Butter is key to keeping chicken moist. For dairy-free, substitute butter with ghee or plant-based butter.
