  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • ¾ cup (150g) packed brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups (270g) Easter M&Ms

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter with brown sugar and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients on low speed, mixing just until combined.
  6. Gently fold in the Easter M&Ms using a spatula, being careful not to break the candies.
  7. Cover the dough and refrigerate for 30 minutes.
  8. Scoop dough using a cookie scoop or tablespoon-sized spoon onto the prepared baking sheets, spacing about 2 inches apart.
  9. Bake for 10-12 minutes until edges are set but centers look slightly underbaked.
  10. Let cookies cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
