Slow Cooker Cowboy Casserole Recipe – Easy & Irresistible Comfort Food

A hearty and comforting casserole made with beef, potatoes, beans, and cheese, all cooked to perfection in a slow cooker. Perfect for family dinners or meal prep.

  • 1 lb ground beef (lean or extra-lean)
  • 4 medium russet or Yukon Gold potatoes, peeled and diced into bite-sized pieces
  • 1 can kidney beans, drained and rinsed
  • 1 cup corn kernels (frozen or canned)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz, or fire-roasted for extra smokiness)
  • 2 tbsp tomato paste
  • 1 cup beef broth (low sodium)
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Optional: green chilies or smoked paprika for extra flavor

Instructions

  1. Heat a skillet over medium heat and cook the ground beef until browned and cooked through, breaking it up with a wooden spoon. Drain any excess grease and transfer the beef to your slow cooker.
  2. In the same skillet, add the diced onions and minced garlic. Cook until the onions are translucent—about 3-4 minutes. Add them to the slow cooker.
  3. Peel and dice the potatoes into bite-sized chunks. Add them to the slow cooker.
  4. Drain and rinse the kidney beans and add them to the slow cooker, along with the corn kernels.
  5. In a small bowl, combine the diced tomatoes, tomato paste, beef broth, cream of mushroom soup, paprika, oregano, salt, and pepper. Stir until well mixed, then pour the sauce over the ingredients in the slow cooker.
  6. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours. Stir occasionally if possible.
  7. About 30 minutes before serving, sprinkle the shredded cheddar cheese evenly over the top. Replace the lid and let the cheese melt into the casserole.
  8. Once the casserole is hot and bubbly, serve it straight from the slow cooker and enjoy!
