  • 2 lbs chuck roast, trimmed of excess fat
  • 1 cup beef broth (low-sodium recommended)
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth (warm)
  • 1/2 tsp thyme (optional)
  • Mashed potatoes (homemade or store-bought)
  • Thick slices of bread (Texas toast works wonderfully)

Instructions

  1. Season the chuck roast generously with salt, pepper, garlic powder, and onion powder.
  2. Heat a large skillet over medium-high heat. Add a drizzle of oil and brown the roast on all sides for about 3–4 minutes per side.
  3. Transfer the seared beef to your slow cooker. Add 1 cup of beef broth and the Worcestershire sauce. Cover and cook on low for 8 hours or high for 4 hours, until the beef is fork-tender.
  4. About 30 minutes before the beef is done, melt the butter in a skillet over medium heat. Stir in the flour and cook for 1–2 minutes, whisking constantly until golden. Gradually add the warm beef broth, whisking to avoid lumps. Add thyme, if using, and simmer until thickened.
  5. Remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir in the prepared gravy.
  6. Place a slice of bread on each plate, top with mashed potatoes, and spoon the beef and gravy mixture generously over the top.

Notes

Brown the beef for added flavor. Use warm broth for lump-free gravy. Adjust seasoning to taste.
