These savory ultimate bacon cheeseburgers combine crispy bacon, melted cheddar and American cheese, and juicy beef patties for a quick and easy comfort food classic perfect for any occasion.

Ingredients

Scale
  • 1 lb (450 g) ground beef (80/20 blend)
  • 8 slices thick-cut bacon
  • 4 slices cheddar cheese
  • 4 slices American cheese
  • 4 hamburger buns (brioche or sesame)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • 2 tbsp unsalted butter (for toasting buns)
  • Optional toppings: lettuce leaves, tomato slices, pickles, red onion rings, ketchup, mustard, mayo

Instructions

  1. Cook the bacon: Heat skillet over medium heat. Lay out 8 slices of thick-cut bacon in a single layer. Cook 4-5 minutes per side until crispy but not burnt. Transfer to paper towels to drain excess fat. Keep bacon fat in pan for patties. (Time: 10 minutes)
  2. Form the patties: In a bowl, combine ground beef with garlic powder, onion powder, salt, and black pepper. Mix gently. Divide into 4 equal portions and shape into patties about ¾ inch thick. Make a slight indentation in the center of each patty with your thumb.
  3. Cook the patties: Using bacon fat in pan, increase heat to medium-high. Add patties and cook about 4 minutes on first side. Flip and cook another 3-4 minutes for medium doneness. (Time: 8 minutes)
  4. Add the cheese: Place 1 slice each of cheddar and American cheese on each patty. Cover pan with lid or foil to melt cheese evenly, about 1-2 minutes.
  5. Toast the buns: Spread butter on cut sides of buns. Toast in clean skillet or under broiler until golden and slightly crisp, about 1-2 minutes.
  6. Assemble the burgers: Place cheesy patty on bottom bun. Add 2 slices crispy bacon on top. Layer with desired toppings and condiments.
  7. Serve immediately with sides like fries or salad. (Total time about 25-30 minutes)

Notes

Use 80/20 ground beef for juiciness. Do not overwork meat to keep patties tender. Cook bacon low and slow for perfect crispness. Make a thumb indentation in patties to prevent puffing. Toast buns just before assembling to avoid sogginess. Patties can be made ahead and refrigerated or frozen. For low-carb, swap buns with lettuce wraps. For dairy-free, use vegan cheese.
