A quick and easy shrimp scampi recipe featuring a rich garlic butter sauce with a hint of lemon zest, perfect for busy weeknights or special occasions.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine (optional)
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste
  • Cooked pasta or crusty bread, for serving (optional)

Instructions

  1. Rinse the shrimp under cold water and pat dry thoroughly with paper towels.
  2. Place a large skillet over medium-high heat. Add 2 tablespoons olive oil and 2 tablespoons butter. Let butter melt and foam but do not let it brown.
  3. Add minced garlic and red pepper flakes (if using). Stir constantly for about 30-45 seconds until fragrant but not browned.
  4. Add shrimp in a single layer. Cook 2 minutes on one side until pink and slightly golden, then flip and cook another 1-2 minutes until opaque and firm.
  5. Pour in white wine and fresh lemon juice. Let it simmer and reduce slightly for about 2 minutes to concentrate flavors and thicken sauce.
  6. Stir in remaining 2 tablespoons butter and chopped parsley. Season with salt and black pepper to taste. The sauce should be glossy and coat the shrimp.
  7. Serve immediately over cooked pasta, rice, or with crusty bread.

Notes

Do not overcrowd the pan to avoid steaming the shrimp. Use fresh garlic for best flavor. Add most butter at the end for a silky sauce. Watch shrimp closely to avoid overcooking. If skipping wine, substitute with chicken or vegetable broth. Let shrimp rest briefly after cooking to absorb flavors. Reheat leftovers gently on the stove, avoid microwave.
