  • 2 tablespoons olive oil or vegetable oil
  • ⅓ cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon ground ginger or 1 teaspoon fresh grated ginger (optional)
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water
  • Chopped fresh parsley or green onions (optional garnish)
  • Sesame seeds (optional garnish)

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt and freshly ground black pepper. Let them rest at room temperature for about 10 minutes.
  2. In a small bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, and ginger until combined. Set aside.
  3. Place a heavy skillet over medium-high heat and add the olive oil. Heat until the oil is shimmering but not smoking, about 1-2 minutes.
  4. Carefully lay the pork chops in the hot skillet. Cook undisturbed for 3-4 minutes until the underside is deep golden brown. Flip and sear the other side for another 3 minutes.
  5. Reduce heat to medium-low. Pour the honey garlic glaze over the chops. Spoon the sauce over the pork chops as it bubbles to build layers of sticky flavor.
  6. Stir the cornstarch slurry into the skillet. Cook for 2-3 minutes, stirring frequently, until the sauce thickens and coats the chops.
  7. Check the internal temperature of the pork chops; they should reach 145°F (63°C). If needed, cover the pan and cook for another 2-3 minutes, spooning glaze over the top.
  8. Transfer the pork chops to plates and spoon any extra glaze from the pan over the top. Garnish with chopped parsley or green onions and a sprinkle of sesame seeds if desired.

Notes

Pat pork chops dry before searing to get a golden crust. Use a meat thermometer to avoid overcooking; aim for 145°F (63°C). If glaze thickens too much, add a teaspoon of water to loosen it. Can substitute soy sauce with tamari or coconut aminos for gluten-free. Cornstarch slurry can be replaced with arrowroot powder or tapioca starch.
