Savory Honey BBQ Pork Chops

Juicy bone-in pork chops glazed with a perfectly sticky honey BBQ sauce, combining sweet and smoky flavors for a quick and delicious meal.

  • 4 bone-in pork chops, about 1-inch thick (68 oz / 170225 g each)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/4 cup honey (85 g)
  • 1/2 cup BBQ sauce (120 ml), smoky and slightly tangy
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat pork chops dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and smoked paprika. Let rest at room temperature for 10 minutes.
  2. In a small bowl, whisk together honey, BBQ sauce, apple cider vinegar, Worcestershire sauce, ground mustard, and red pepper flakes if using. Set aside.
  3. Heat a heavy skillet or cast iron pan over medium-high heat and add olive oil. Heat until shimmering but not smoking, about 2 minutes.
  4. Add pork chops to the hot skillet without crowding. Cook for 3-4 minutes without moving to develop a golden-brown crust. Flip and sear the other side for 3 minutes.
  5. Reduce heat to medium-low. Brush a generous layer of the honey BBQ glaze on each chop. Cook for 2 minutes, then flip and glaze the other side. Repeat once more for a thick, sticky coating.
  6. Check internal temperature with an instant-read thermometer; pork chops should reach 145°F (63°C). If needed, cook for another 2-3 minutes, flipping and glazing as necessary.
  7. Transfer pork chops to a plate and cover loosely with foil. Let rest for 5 minutes to redistribute juices.
  8. Serve warm with any remaining glaze spooned over the chops.

Notes

Use a meat thermometer to avoid overcooking; resting the chops after cooking keeps them juicy. If glaze thickens or burns, lower heat and add a splash of water or apple juice. Glaze can be made ahead and refrigerated for up to 3 days. For a grilled version, cook chops on medium heat and brush glaze during last 5 minutes.
