Savory Garlic Butter Steak Bites

Juicy, tender steak bites seared to perfection and coated in a luscious garlic butter sauce. Quick and easy to make, perfect for weeknights or special occasions.

  • 1 pound beef sirloin steak, cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 34 garlic cloves, minced
  • 3 tablespoons unsalted butter, softened
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped
  • Optional: pinch of red pepper flakes
  • Optional: squeeze of fresh lemon juice

Instructions

  1. Trim any excess fat from the sirloin and cut into 1-inch cubes. Pat dry with paper towels to remove moisture. Season generously with salt and pepper.
  2. Heat a cast iron or heavy skillet over medium-high heat. Add 1 tablespoon olive oil and heat until shimmering but not smoking.
  3. Add steak cubes in a single layer without overcrowding. Sear undisturbed for about 2 minutes until a golden crust forms, then flip and sear other sides for another 2 minutes. Cook in batches if needed.
  4. Reduce heat to medium. Push steak bites to one side of the pan. Add minced garlic and 3 tablespoons softened butter to the empty side. Stir garlic in butter until fragrant (about 30 seconds), then toss steak bites in garlic butter sauce to coat evenly.
  5. Sprinkle chopped fresh parsley over the steak bites and toss again. Add red pepper flakes and lemon juice if desired.
  6. Transfer steak bites to a warm plate and drizzle any remaining garlic butter sauce from the pan over top. Serve immediately.

Notes

Pat steak dry before searing to get a better crust. Do not overcrowd the pan to avoid steaming. Let steak rest 3-5 minutes after cooking to redistribute juices. Add garlic after searing to prevent burning. Use medium-high heat for best sear. For dairy-free, substitute butter with vegan butter or coconut oil.
