A creamy, spicy buffalo chicken dip with a tangy blue cheese swirl, perfect for game day and parties. Quick and easy to prepare, this dip balances bold flavors with a smooth texture.

Ingredients

Scale
  • 3 cups shredded cooked chicken (about 450g, rotisserie chicken recommended)
  • 8 oz cream cheese, softened (225g, Philadelphia recommended)
  • 1/2 cup buffalo wing sauce (120ml, Frank’s RedHot recommended)
  • 1/2 cup blue cheese crumbles (75g, small-curd quality blue cheese like Maytag)
  • 1/2 cup sour cream (120ml)
  • 1 cup shredded cheddar cheese (100g, sharp cheddar)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon freshly ground black pepper
  • Chopped green onions (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened cream cheese with sour cream until smooth and creamy, about 2-3 minutes, using a hand mixer or sturdy spoon.
  3. Stir in buffalo wing sauce, garlic powder, onion powder, and freshly ground black pepper until well blended.
  4. Gently fold in shredded cooked chicken and shredded cheddar cheese until evenly distributed.
  5. Spread the mixture evenly in an 8×8 inch (20×20 cm) baking dish, smoothing the top with a spatula.
  6. Sprinkle blue cheese crumbles evenly over the top and gently swirl into the surface using a butter knife or skewer for a marbled effect.
  7. Bake for 20-25 minutes until bubbly around the edges and lightly golden on top. Optionally broil for 1-2 minutes for a crispier top, watching carefully to avoid burning.
  8. Let the dip cool for 5 minutes to thicken slightly before serving.
  9. Garnish with chopped green onions and serve warm with sturdy tortilla chips, celery sticks, or warm pita wedges.

Notes

If cream cheese isn’t soft enough, microwave for 15-20 seconds before mixing to avoid lumps. Shred chicken finely for better texture. For a twist, swap sour cream with Greek yogurt or use ranch dressing instead of blue cheese. Broil briefly for a crispier top if desired.
