Deliciously flaky puff pastry bites filled with creamy brie and tangy cranberry sauce, enhanced with fresh rosemary. Perfect for elegant entertaining and quick to prepare.

  • 2 sheets puff pastry (thawed if frozen)
  • 8 ounces brie cheese, rind removed and cut into small cubes
  • ½ cup cranberry sauce (homemade or store-bought)
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 tablespoon honey (optional, for drizzling)
  • 1 large egg, beaten (for egg wash)
  • Pinch of salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a lightly floured surface, roll out each puff pastry sheet gently to smooth creases. Cut each sheet into 16 equal squares (about 3 inches each).
  3. In a small bowl, mix cranberry sauce and finely chopped rosemary.
  4. Place a small cube of brie (about ½ inch) in the center of each puff pastry square. Top with about one teaspoon of the cranberry-rosemary mixture. Season lightly with salt and pepper.
  5. Fold each square diagonally to form a triangle. Press edges firmly with a fork to seal.
  6. Brush each bite with beaten egg using a pastry brush.
  7. Arrange bites on a parchment-lined baking sheet, spacing about 1 inch apart. Bake for 15–18 minutes until puffed and golden brown.
  8. Transfer bites to a cooling rack. Drizzle with honey if desired.
  9. Serve warm for best flavor and texture.

Notes

Keep puff pastry cold until ready to use to prevent stickiness. Do not overload filling to avoid sogginess. Use a fork to seal edges firmly. Egg wash gives a golden, shiny finish. Can be made ahead and baked fresh. For vegan version, use dairy-free brie and fruit chutney instead of cranberry sauce.
