Savory Blackstone Smash Burgers with Caramelized Onions

A quick and easy smash burger recipe cooked on a Blackstone griddle featuring crispy edges, juicy beef patties, and sweet caramelized onions. Perfect for casual gatherings and satisfying meals.

  • 1 pound (450 g) ground beef (80/20 blend)
  • 2 medium yellow onions, thinly sliced
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • Cheese slices (cheddar or American), optional
  • Burger buns (brioche or potato rolls recommended)
  • 1 tablespoon (15 ml) butter or oil for sautéing onions and greasing griddle
  • Condiments and toppings: mustard, ketchup, pickles, lettuce (optional)

Instructions

  1. Heat 1 tablespoon (15 ml) of butter or oil on the Blackstone griddle over medium heat. Add the thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for about 20-25 minutes until deep golden and caramelized.
  2. Divide 1 pound (450 g) of ground beef into 3-4 equal portions, gently rolling each into a loose ball. Avoid packing too tightly to keep them juicy.
  3. Heat the griddle to medium-high and add a light coating of oil or butter to prevent sticking.
  4. Place each beef ball on the hot griddle. Using a sturdy spatula or burger press, press down firmly to flatten the patty to about 1/4 inch (6 mm) thickness. Hold for 10 seconds to set the crust.
  5. Let the patties cook undisturbed for 2-3 minutes until a deep brown crust forms and edges crisp.
  6. Flip the patties carefully using your spatula. Immediately place a slice of cheese on each patty if desired. Cook for another 1-2 minutes until cheese melts and patties are cooked through.
  7. Toast the burger buns cut-side down on the griddle for 1-2 minutes until lightly toasted and golden.
  8. Assemble the burgers starting with the toasted bun bottom, add the patty with melted cheese, pile on a generous spoonful of caramelized onions, add your favorite condiments, and finish with the top bun.

Notes

Do not overwork the meat to keep patties tender. Use high heat for a crispy crust. Press patties firmly once at the start but avoid pressing after flipping to retain juiciness. Caramelize onions slowly over low heat for best flavor. Toast buns on the griddle to prevent sogginess. Cheese is optional and should be added after flipping patties.
