  • 23 lb chuck roast
  • 2 cups beef broth (low-sodium preferred)
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 large yellow onion, chopped
  • 2 medium carrots, chopped (optional)
  • 2 tablespoons all-purpose flour (or gluten-free alternative)
  • 2 tablespoons butter
  • 2 lb russet potatoes, peeled and chopped
  • 1/2 cup milk or cream
  • 4 slices soft white bread or sourdough
  • Salt and pepper to taste

Instructions

  1. Season the chuck roast generously with salt and pepper. Heat a large skillet over medium-high heat and sear the beef on all sides until browned (about 2-3 minutes per side).
  2. Place the chopped onions and carrots at the bottom of the slow cooker. Add the seared beef on top.
  3. In a small bowl, whisk together beef broth, Worcestershire sauce, and minced garlic. Pour this mixture over the beef in the slow cooker.
  4. Cover the slow cooker and set it to low heat. Cook for 8-10 hours, or until the beef is tender and shreds easily with a fork.
  5. About 30 minutes before the beef is done, boil the peeled and diced potatoes in salted water until fork-tender (approximately 15 minutes). Drain and mash with butter, milk or cream, salt, and pepper until smooth and creamy.
  6. Remove the beef and vegetables from the slow cooker. Pour the cooking liquid into a saucepan. Heat over medium heat, whisking in flour until thickened (start with 2 tablespoons and add more if needed).
  7. Lay a slice of bread on a plate, top with mashed potatoes, then layer shredded beef and gravy over the top. Serve immediately and enjoy!
