A simple and refreshing frozen cocktail featuring icy watermelon chunks, fresh mint, lime, tequila, and a touch of sweetness, perfect for summer.

  • 4 cups watermelon chunks, frozen (seedless if possible)
  • 1/2 cup freshly squeezed lime juice (about 4 limes)
  • 1/4 cup granulated sugar (adjust to taste; can swap for honey or agave)
  • 1/2 cup silver tequila
  • 1/2 cup triple sec or orange liqueur (optional)
  • 1012 fresh mint leaves, plus extra for garnish
  • Coarse salt or sugar for rimming glasses
  • Ice cubes (optional, for lighter slush)

Instructions

  1. Freeze the watermelon chunks (about 1-inch pieces) on a baking sheet lined with parchment paper for at least 4 hours or overnight.
  2. Rub a lime wedge around the rims of serving glasses and dip them in coarse salt or sugar. Set aside.
  3. Lightly muddle 10-12 fresh mint leaves in a blender or small bowl to release their oils, being gentle to avoid bitterness.
  4. Add frozen watermelon chunks, lime juice, sugar, muddled mint, tequila, and triple sec to the blender. Pulse to break up watermelon, then blend on high until smooth and icy. Add a splash of cold water or ice cubes if too thick.
  5. Taste and adjust sweetness or lime juice as desired, blending briefly if adjustments are made.
  6. Pour the slushie into prepared glasses, garnish with a sprig of fresh mint and a small wedge of watermelon. Serve immediately with a straw or spoon.

Notes

Freeze watermelon chunks well in advance for best texture. Muddle mint gently to avoid bitterness. Serve immediately for optimal icy texture. For non-alcoholic version, omit tequila and triple sec and add sparkling water. Rim glasses just before serving to keep rims crisp.
