  • 2 garlic cloves, minced
  • 2 shallots, finely chopped
  • 1 cup vegetable broth
  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Pinch of nutmeg
  • Salt and pepper to taste
  • Fresh herbs (optional, thyme or sage recommended)

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions. Reserve 1 cup of pasta water before draining. Set pasta aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped shallots, sautéing until fragrant and softened, about 3 minutes.
  3. Stir in pumpkin puree and vegetable broth, mixing until smooth. Add nutmeg, salt, and pepper to taste. Let the mixture simmer for 5 minutes.
  4. Lower the heat and pour in heavy cream, stirring until well combined. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is reached.
  5. Add cooked pasta to the skillet, tossing until each piece is coated with the creamy pumpkin sauce.
  6. Sprinkle crumbled feta cheese on top and gently stir to incorporate. Taste and adjust seasoning as needed.
  7. Serve immediately, garnished with fresh herbs if desired.
