Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup pumpkin puree (100% pure pumpkin)
  • 1/2 cup pure maple syrup
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin spice (cinnamon, nutmeg, ginger, cloves)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking pan by greasing it or lining it with parchment paper.
  2. In a medium mixing bowl, whisk together the flour, pumpkin spice, baking powder, and salt. Set aside.
  3. In a large mixing bowl, whisk the melted butter, brown sugar, and maple syrup until smooth. Add in the pumpkin puree, eggs, and vanilla extract, and whisk until fully combined.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula. Mix until just combined—avoid overmixing.
  5. If using add-ins like chopped nuts or chocolate chips, gently fold them into the batter.
  6. Transfer the batter to your prepared baking pan, spreading it evenly with a spatula.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the blondies to cool in the pan for about 15 minutes, then transfer them to a wire rack to cool fully before slicing.

Notes

Let the blondies cool completely before slicing for clean edges and settled flavors. Add-ins like chopped pecans or chocolate chips can enhance texture and flavor.
