These pumpkin cream cheese muffins combine spiced pumpkin batter with a creamy, tangy cream cheese filling, making them the perfect fall treat.

  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 1 cup (200g) granulated sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 cup (240g) canned pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon vanilla extract
  • 8 oz (227g) cream cheese, softened
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin pan with paper liners.
  2. In a medium bowl, beat the softened cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy. Set aside.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  4. In another bowl, whisk together the sugar, vegetable oil, eggs, pumpkin puree, and vanilla extract until smooth.
  5. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix.
  6. Scoop a tablespoon of batter into each muffin cup, then add a heaping teaspoon of cream cheese filling in the center. Top with another tablespoon of batter to cover the filling.
  7. Bake for 18-22 minutes, or until the tops are set and a toothpick inserted into the muffin (avoiding the cream cheese center) comes out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer them to a cooling rack to finish cooling.
