  • 1 cup (240ml) whole milk, room temperature

  • 1 tbsp apple cider vinegar
  • 1 cup (226g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar, sifted
  • 23 tbsp (30-45ml) heavy cream
  • 1 tsp vanilla bean paste or extract
  • Pinch of salt
  • Edible gold leaf sheets

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and dust with flour or line with parchment paper.
  2. Brown the unsalted butter in a medium saucepan over medium heat until golden brown and nutty smelling (5-7 minutes). Remove from heat and cool slightly.
  3. Sift together flour, baking powder, baking soda, and salt in a large bowl.
  4. In another bowl, whisk browned butter, granulated sugar, and eggs until smooth. Add milk, vanilla extract, and apple cider vinegar.
  5. Gradually fold dry ingredients into wet mixture with a rubber spatula until just combined; batter should be thick but pourable.
  6. Divide batter evenly between pans and bake 30-35 minutes or until a toothpick comes out clean and cake springs back lightly.
  7. Cool cakes in pans for 10 minutes, then transfer to cooling racks and cool completely.
  8. Beat softened butter on medium speed until creamy (~2 minutes). Gradually add powdered sugar alternating with heavy cream, beating on low until combined.
  9. Add vanilla bean paste and salt, then beat on high for 3-5 minutes until fluffy and spreadable. Adjust cream for desired texture.
  10. Place one cake layer on serving plate, spread a generous layer of buttercream, add second layer, and apply a thin crumb coat. Chill 20 minutes.
  11. Apply a final thick layer of frosting, smooth sides and top with offset spatula and bench scraper. Chill 10 minutes.
  12. Using a dry pastry brush, carefully press edible gold leaf sheets onto frosting in random patches. Work slowly to avoid tearing.
  13. Let cake come to room temperature before slicing and serving.
