Perfect Raspberry Champagne Cocktail

A quick and elegant cocktail featuring fresh raspberries and crisp brut champagne, perfect for celebrations and easy to customize for mocktails.

  • 68 fresh raspberries per cocktail (plus extras for garnish)
  • 4 to 5 ounces (120150 ml) brut champagne or sparkling wine per serving
  • 1/2 ounce (15 ml) raspberry liqueur (optional)
  • 1/2 teaspoon simple syrup (adjust to taste)
  • 1 teaspoon (5 ml) fresh lemon juice
  • Ice cubes (for chilling glass or pre-mixing if desired)

Instructions

  1. Chill champagne flutes in the fridge or freezer for at least 15 minutes before serving.
  2. Place 6 fresh raspberries in a small bowl or shaker and gently muddle with a muddler or spoon until juice is released but berries still hold some shape (about 20 seconds).
  3. Add 1/2 teaspoon simple syrup and 1 teaspoon fresh lemon juice to the muddled raspberries. Stir gently to combine. Add 1/2 ounce raspberry liqueur if using.
  4. Pour the raspberry mixture into the chilled glass, using a fine strainer to catch seeds if desired.
  5. Slowly pour 4 to 5 ounces (120-150 ml) chilled champagne or sparkling wine over the raspberry mixture to preserve bubbles.
  6. Garnish with 2-3 whole raspberries and a lemon twist, then serve immediately.

Notes

Chill glasses and champagne for best results. Muddle raspberries gently to avoid bitterness from seeds. Pour champagne slowly down the side of the glass to minimize foam and preserve bubbles. Prepare raspberry mixture up to 4 hours ahead and refrigerate; add champagne just before serving. For a mocktail, replace champagne with sparkling water or non-alcoholic sparkling wine and add raspberry syrup for sweetness.
