  • 2 ½ cups (310g) all-purpose flour
  • 1 ½ cups (300g) granulated sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup (240ml) buttermilk, room temperature
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 35 drops pink gel food coloring
  • 1 cup (226g) unsalted butter, softened
  • 4 cups (480g) powdered sugar
  • ¼ cup (60ml) heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your cake pans. Line the bottoms with parchment paper for easy release.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In another bowl, combine the buttermilk, vegetable oil, eggs, vanilla extract, and vinegar. Mix until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until well combined. Avoid overmixing to keep the cake light and fluffy.
  5. Stir in the pink food coloring, adding more drops as needed to achieve your desired shade.
  6. Divide the batter evenly between the two prepared pans. Smooth the tops with a spatula.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
  9. For the frosting, beat the butter until creamy, then gradually add powdered sugar. Mix in the heavy cream, vanilla extract, and salt. Beat until light and fluffy.
  10. Spread a layer of frosting between the cakes, then frost the top and sides. Use an offset spatula for a smooth finish.
