  • 1/2 cup (115 g) unsalted butter, cold and cubed
  • 1 tbsp granulated sugar
  • 1/4 tsp salt
  • 34 tbsp ice water
  • 1/3 cup (75 g) unsalted butter, softened
  • 1/2 cup (50 g) almond meal (finely ground almond flour)
  • 1/3 cup (40 g) powdered sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour
  • 3 medium fresh nectarines, thinly sliced
  • 1 tbsp fresh thyme leaves, roughly chopped
  • 2 tbsp honey (floral honey like wildflower or acacia)
  • 1 egg yolk beaten with 1 tbsp water (egg wash)
  • 1 tsp coarse sugar (optional, for sprinkling on crust edges)

Instructions

  1. Make the crust: In a large bowl, whisk together flour, sugar, and salt. Add cold, cubed butter and cut into flour using a pastry cutter or fingertips until mixture resembles coarse crumbs with pea-sized bits of butter.
  2. Slowly add ice water, stirring gently until dough just comes together. Form into a disk, wrap in plastic, and chill for at least 30 minutes.
  3. Prepare the frangipane filling: In a medium bowl, cream softened butter with powdered sugar until smooth and fluffy. Beat in egg and vanilla extract.
  4. Fold in almond meal and flour until smooth and spreadable. Set aside.
  5. Slice nectarines thinly, about 1/4 inch thick, removing pits.
  6. Assemble the galette: On lightly floured parchment, roll chilled dough into a roughly 12-inch circle. Transfer parchment with dough onto a baking sheet.
  7. Spread frangipane evenly over dough, leaving a 2-inch border all around. Arrange nectarine slices over filling in overlapping concentric circles. Sprinkle with chopped fresh thyme.
  8. Fold dough edges over filling, pleating as needed to create rustic edge. Brush crust with egg wash. Drizzle honey over nectarines and optionally sprinkle coarse sugar on crust edges.
  9. Bake in preheated oven at 375°F (190°C) for 35-40 minutes until crust is golden and frangipane is set.
  10. Cool galette for at least 15 minutes before slicing. Serve warm or at room temperature.

Notes

Keep ingredients cold and handle dough gently for flaky crust. Chill dough at least 30 minutes before rolling. If crust edges brown too quickly, cover with foil halfway through baking. Let galette cool before slicing to allow filling to set. Fresh thyme is preferred; if using dried, reduce amount by half. Nectarines should be ripe but firm. Can substitute peaches or plums for nectarines. For gluten-free, use gluten-free flour blend. For vegan, use vegan butter, flax egg, and maple syrup instead of honey.
