  • 3 cups (375 g) all-purpose flour
  • 2 1/4 teaspoons (7 g) active dry yeast
  • 2 teaspoons (8 g) granulated sugar
  • 1 cup (240 ml) warm water (110°F/43°C)
  • 2 tablespoons (30 ml) olive oil
  • 4 cloves garlic, roasted and chopped
  • 1/2 cup (50 g) freshly grated parmesan cheese
  • 1 teaspoon (5 g) kosher salt
  • Fresh rosemary (optional)

Instructions

  1. In a small bowl, mix 1 cup (240 ml) of warm water and 2 teaspoons (8 g) of granulated sugar. Sprinkle 2 1/4 teaspoons (7 g) of active dry yeast over the top and let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine 3 cups (375 g) of all-purpose flour and 1 teaspoon (5 g) of kosher salt. Gradually pour in the yeast mixture and 2 tablespoons (30 ml) of olive oil. Stir until the dough comes together.
  3. Transfer the dough to a lightly floured surface and knead for 8-10 minutes until it’s smooth and elastic. If the dough feels too sticky, add a tablespoon of flour at a time until it’s manageable.
  4. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm spot for 1-2 hours, or until doubled in size.
  5. Preheat your oven to 400°F (200°C). While the oven heats, roast 4 cloves of garlic in olive oil until soft and aromatic. Chop the roasted garlic finely.
  6. Once the dough has risen, punch it down and transfer it to a greased 9×13-inch pan. Spread it out evenly, using your fingers to create dimples across the surface.
  7. Brush 2 tablespoons (30 ml) of olive oil over the dough, then sprinkle the roasted garlic, 1/2 cup (50 g) of grated parmesan cheese, and a handful of fresh rosemary on top.
  8. Bake for 20-25 minutes, or until the bread is golden brown and the edges are crisp. Let it cool slightly before slicing.

Notes

Ensure the water for proofing yeast is warm but not hot to avoid killing the yeast. Tent the bread with foil if it browns too quickly during baking.
