  • 4 oz (115 g) cream cheese, softened but cool
  • 1 cup (120 g) powdered sugar, sifted
  • 2 tbsp (30 ml) whole milk
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your bundt pan thoroughly.
  2. In a large bowl, sift together flour, cocoa powder, sugar, baking soda, and salt. Whisk to blend evenly.
  3. In a separate bowl, whisk buttermilk, vegetable oil, eggs, vanilla extract, red food coloring, and white vinegar until smooth.
  4. Slowly pour the wet mixture into the dry ingredients while gently folding with a rubber spatula. Mix until just combined.
  5. Pour the batter into the prepared bundt pan and smooth the top.
  6. Bake for 50 to 60 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs. Tent with foil if top browns too quickly.
  7. Cool the cake in the pan for about 15 minutes, then invert onto a cooling rack to cool completely.
  8. Prepare the cream cheese glaze by beating cream cheese, powdered sugar, milk, vanilla extract, and salt until smooth and pourable. Add more milk if too thick.
  9. Drizzle the glaze over the cooled cake and let it set for at least 20 minutes before slicing.

Use gel-based red food coloring for vibrant color without thinning the batter. Sift dry ingredients for a tender crumb and smooth glaze. Use room temperature eggs and buttermilk for even mixing.
