Perfect Bacon-Wrapped Filet Mignon

A simple yet indulgent recipe featuring tender filet mignon wrapped in crispy, smoky bacon, perfect for special occasions or an impressive dinner.

Ingredients

  • Filet mignon steaks, about 6 oz (170 g) each, thick-cut
  • Bacon slices, thick-cut
  • Kosher or sea salt
  • Freshly ground black pepper, coarse grind
  • Garlic powder (optional)
  • Olive oil, about 1 tablespoon
  • Unsalted butter, 1-2 tablespoons
  • Fresh rosemary or thyme sprigs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the filet mignon steaks dry with paper towels.
  3. Season each steak generously with kosher salt, freshly ground black pepper, and a light dusting of garlic powder on all sides.
  4. Wrap each filet with a slice of bacon, securing it with a toothpick if needed.
  5. Heat the olive oil in your cast iron skillet over medium-high heat until shimmering but not smoking.
  6. Sear the bacon-wrapped steaks for about 2-3 minutes per side until the bacon starts to crisp and the filet develops a golden crust.
  7. Add the butter and fresh rosemary or thyme to the skillet, and spoon the melted butter over the steaks during searing.
  8. Transfer the skillet to the preheated oven and roast for about 5-7 minutes for medium-rare (internal temp 130°F/54°C). Adjust time for preferred doneness.
  9. Remove from oven and let the steaks rest for 5 minutes on a warm plate.
  10. Remove toothpicks if used, and serve immediately.

Notes

Use thick-cut bacon to prevent shrinking and ensure crispiness. Let steaks rest after cooking to lock in juices. A meat thermometer is recommended for perfect doneness. If no oven-safe skillet is available, transfer steaks to a baking sheet after searing. Optionally, add fresh herbs or a light maple glaze on bacon before wrapping for extra flavor.
