  • 810 fresh ripe figs, quartered
  • 1 cup toasted pecans or walnuts with a pinch of smoked paprika and sea salt
  • 23 tablespoons local raw honey
  • 46 oz thinly sliced prosciutto or soppressata
  • A mix of crisp crackers and sliced baguette or rustic bread
  • A handful of fresh rosemary or thyme sprigs
  • Optional: small clusters of grapes or sliced crisp apples
  • Optional: fig jam or grainy mustard for serving

Instructions

  1. Toast the nuts: Heat a dry skillet over medium heat. Add pecans or walnuts, sprinkle with smoked paprika and salt, and toast, stirring frequently, until fragrant and golden (5-7 minutes). Remove and let cool.
  2. Slice the brie: Using a sharp knife, cut the brie wheel into wedges or leave whole. Let sit at room temperature for 15 minutes before serving for extra creaminess.
  3. Prepare the figs: Wash and pat dry figs. Quarter each fig gently to preserve their shape.
  4. Slice bread and arrange crackers: Cut baguette into thin slices about 1/4 inch thick. Arrange bread and crackers on the board, leaving space for other ingredients.
  5. Arrange the board: Place brie slightly off-center. Scatter figs around the cheese. Add grapes or apple slices if using. Spoon toasted nuts into small bowls or scatter on the board. Lay out cured meats in loose folds or rolls. Drizzle honey over brie and figs. Garnish with rosemary or thyme sprigs.
  6. Final touches: Adjust arrangement for balance of colors and textures. Add more crackers or fruit to fill gaps. Serve immediately or cover loosely and refrigerate up to 2 hours before serving (bring to room temperature before serving).
