  • 1 cup creamy peanut butter (avoid natural peanut butter—it’s too oily)
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, whipped to stiff peaks
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Chocolate shavings or crushed peanuts for garnish (optional)

Instructions

  1. Combine graham cracker crumbs, melted butter, and sugar in a medium bowl. Mix until the crumbs are evenly coated and resemble wet sand. Press the mixture firmly into the bottom and sides of a 9-inch pie dish. Chill in the fridge for 10-15 minutes while you make the filling.
  2. In a large mixing bowl, beat the peanut butter and cream cheese together until smooth and creamy. Add the powdered sugar and vanilla extract, then beat again until fully combined.
  3. In a separate bowl, whip the heavy cream to stiff peaks using a hand mixer. Gently fold the whipped cream into the peanut butter mixture using a rubber spatula. Be careful not to deflate the whipped cream—you want the filling to stay light and airy.
  4. Spoon the filling into the prepared crust, smoothing the top with your spatula. Place the pie in the fridge for at least 4 hours or overnight to set.
  5. Before serving, whip the second cup of heavy cream with powdered sugar until soft peaks form. Spread or pipe the whipped cream over the chilled pie. Garnish with chocolate shavings or crushed peanuts if desired.
