  • 3 medium ripe bananas, mashed
  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 6 tbsp (85g) unsalted butter, melted
  • ¾ cup (150g) brown sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ¼ cup (60ml) plain yogurt
  • ½ cup (125g) creamy peanut butter

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, combine brown sugar and melted butter; stir until smooth.
  4. Add egg and vanilla extract to the sugar-butter mixture and mix well.
  5. Stir in yogurt and mashed bananas until mostly smooth but slightly chunky.
  6. Gently fold the dry ingredients into the wet ingredients using a spatula; do not overmix.
  7. Warm peanut butter for about 15 seconds in the microwave to soften.
  8. Spoon batter into muffin cups, filling about ⅔ full.
  9. Drop about a teaspoon of peanut butter onto each muffin and swirl gently with a skewer or butter knife to create ribbons.
  10. Bake for 18–22 minutes or until a toothpick inserted comes out with a few moist crumbs.
  11. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Warm the peanut butter slightly before swirling to create soft ribbons. Avoid overmixing the batter to keep muffins tender. Use very ripe bananas for best moisture and sweetness. Rotate muffin tin halfway through baking if your oven has hot spots.
