A moist and flavorful chocolate chip zucchini bread made with a quick one bowl method, perfect for a comforting breakfast or snack with a tender crumb and pockets of melty chocolate.

  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¾ cup (150g) packed light brown sugar
  • ⅓ cup (80ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (150g) grated zucchini, lightly squeezed
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or line it with parchment paper to prevent sticking.
  2. Grate the zucchini using a box grater or food processor. Place the grated zucchini on a clean kitchen towel and lightly squeeze out excess moisture.
  3. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon until evenly combined.
  4. Stir in the brown sugar and vegetable oil until the mixture looks crumbly and slightly clumped.
  5. Add the eggs and vanilla extract, mixing until the batter is smooth and glossy. Do not overbeat.
  6. Gently fold in the grated zucchini and chocolate chips using a rubber spatula.
  7. Transfer the batter to the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 55-65 minutes, checking at 55 minutes by inserting a toothpick in the center. It should come out with a few moist crumbs but no wet batter.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Squeeze out excess moisture from zucchini to avoid gummy bread. Use room temperature eggs and oil for smoother batter. Fold ingredients gently to prevent tough bread. Tent with foil after 40 minutes if browning too fast. For extra moist crumb, substitute half the oil with applesauce. Toast nuts before adding for deeper flavor. Gluten-free and vegan substitutions are possible.
