  • ½ cup unsalted butter (115 g), softened
  • 1 cup packed brown sugar (200 g)
  • ½ cup granulated sugar (100 g)
  • 2 large eggs, room temperature
  • 1 ½ teaspoons vanilla extract
  • ¾ cup buttermilk (180 ml) (or milk plus 1 tablespoon lemon juice)
  • 2 medium apples, peeled and grated or finely chopped (Granny Smith or Honeycrisp preferred)
  • Optional: pinch of nutmeg or ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5 inch loaf pan well with butter or non-stick spray and set aside.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a small bowl, combine brown sugar, cinnamon, and softened butter for the swirl mixture; mix until crumbly and spreadable. Set aside.
  4. In another bowl, beat softened butter with granulated sugar until creamy and fluffy, about 2-3 minutes. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Add buttermilk to the wet mixture and mix gently to combine.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined; avoid overmixing.
  7. Fold in the grated or finely chopped apples evenly throughout the batter.
  8. Pour half the batter into the prepared loaf pan, spreading evenly. Dollop half the brown sugar cinnamon swirl mixture over the batter and gently swirl with a knife or skewer to create a marbled effect.
  9. Add the remaining batter on top and repeat swirling with the rest of the cinnamon mixture.
  10. Bake for 50-60 minutes, starting to check at 50 minutes by inserting a toothpick into the center; it should come out clean or with a few moist crumbs but no wet batter.
  11. Let the loaf cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Do not overmix the batter to keep the bread tender. Use freshly grated apples for moisture and texture. Swirl the cinnamon mixture gently to avoid overly sweet or dense spots. Tent with foil if the top browns too fast. Room temperature ingredients blend better. Start checking doneness at 50 minutes.
