Sweet maple-glazed carrots paired with smoky, crispy bacon make this side dish irresistible and perfect for any occasion.

  • 1 lb fresh whole carrots, peeled and cut into sticks
  • 4 slices thick-cut bacon, cut into bite-sized pieces
  • 2 tbsp real maple syrup
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with aluminum foil for easier cleanup.
  2. Peel the carrots and slice them into sticks about 3 inches long and ½ inch thick. Place them on the prepared baking sheet.
  3. Cut the bacon into small, bite-sized pieces and scatter them over the carrots.
  4. Drizzle the carrots and bacon with the olive oil and maple syrup. Sprinkle with salt and pepper to taste.
  5. Use tongs or your hands to toss everything together until the carrots and bacon are evenly coated.
  6. Spread the mixture out in a single layer on the baking sheet. Make sure the bacon pieces aren’t stacked on each other to ensure crisping.
  7. Roast in the oven for 20-25 minutes, stirring halfway through. The carrots should be tender and caramelized, and the bacon should be crispy.
  8. Remove from the oven and let cool for a couple of minutes. Garnish with chopped parsley if desired and serve warm.

Notes

For extra crispy bacon bits, cook the bacon separately on the stovetop and sprinkle it over the carrots before serving. Watch the bacon closely during roasting to prevent burning.
