  • 3 pounds pork shoulder (pork butt), trimmed of excess fat
  • 1 cup BBQ sauce (homemade or favorite brand)
  • 1/2 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder (optional)
  • 1/2 cup water or chicken broth
  • 3 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 12 slider buns (soft and slightly sweet)
  • Optional: dill pickle slices or jalapeños

Instructions

  1. Trim excess fat from the pork shoulder and pat dry. Mix brown sugar, smoked paprika, garlic powder, onion powder, salt, black pepper, and chili powder in a small bowl. Rub the spice blend all over the pork, pressing it in.
  2. Place the seasoned pork shoulder in a slow cooker. Pour in apple cider vinegar and water or chicken broth. Cover and cook on low for 8–10 hours or on high for 4–5 hours until pork is tender and shreds easily.
  3. While pork cooks, combine shredded cabbage and carrots in a large bowl. In a separate bowl, whisk mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and pepper. Pour dressing over veggies and toss to coat. Refrigerate until serving.
  4. Remove pork from slow cooker and shred using two forks or meat claws. Discard large fat chunks. Return shredded pork to slow cooker and stir in BBQ sauce. Keep warm on low.
  5. Optional: Toast slider buns on a baking sheet under broiler for 1-2 minutes or on a grill pan about 1 minute per side.
  6. Assemble sliders by spooning BBQ pulled pork onto bottom half of buns, topping with creamy coleslaw, and covering with bun tops. Add pickle slices or jalapeños if desired. Serve immediately.

Notes

For gluten-free, use gluten-free slider buns or lettuce wraps. For dairy-free, substitute mayonnaise with dairy-free mayo. Toast buns just before serving to avoid sogginess. Cooking low and slow yields the best tender pork. Leftovers keep well refrigerated for up to 3 days; keep pork and coleslaw separate. Reheat pork gently with a splash of broth or water.
