  • 1/2 cup soy sauce (low-sodium optional)
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • Optional garnishes: sesame seeds and chopped green onions

Instructions

  1. In a mixing bowl, whisk together soy sauce, brown sugar, garlic, ginger, rice vinegar, and sesame oil until well combined.
  2. Place chicken thighs or breasts into the crockpot and pour the teriyaki sauce over them, ensuring each piece is coated.
  3. Cover the crockpot with the lid and set it to cook on low for 6-7 hours or high for 3-4 hours.
  4. Once cooked, remove the chicken from the crockpot and set aside. Shred it using two forks if preferred.
  5. To thicken the sauce, mix cornstarch with water to create a slurry and stir it into the sauce in the crockpot. Let it cook on high for 10-15 minutes until thickened.
  6. Return the chicken to the crockpot and toss it in the thickened sauce until coated.
  7. Garnish with sesame seeds and chopped green onions before serving.
