  • 34 pounds beef chuck roast, trimmed of excess fat
  • 45 large carrots, peeled and cut into chunks
  • 68 small Yukon Gold potatoes, halved
  • 1 large onion, sliced or diced
  • 4 cloves garlic, minced
  • 2 cups low sodium beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • Salt and black pepper to taste
  • 1 teaspoon dried thyme
  • 1 bay leaf (optional)
  • 2 tablespoons olive oil

Instructions

  1. Peel and chop your vegetables, trim the roast, and gather all seasonings.
  2. Generously sprinkle salt, pepper, and thyme over the roast.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
  4. Place the carrots, potatoes, onion, and garlic at the bottom of the slow cooker.
  5. Place the seared roast on top of the vegetables.
  6. In a bowl, whisk together beef broth, red wine, tomato paste, and Worcestershire sauce. Pour over the roast and vegetables.
  7. Toss in the bay leaf and sprinkle additional thyme if desired.
  8. Cover and cook on low for 8 hours or high for 4-5 hours. The beef should be fork-tender and the vegetables cooked through.
  9. Remove the bay leaf and ladle the roast, vegetables, and broth onto plates.
