Irresistible Shrimp Scampi Pasta Bake Recipe in 30 Minutes

  • 1 lb large shrimp, peeled and deveined
  • 12 oz medium-sized pasta (penne, rigatoni, or linguine)
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine (or chicken broth)
  • 2 tbsp freshly squeezed lemon juice
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, freshly grated
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain, toss with a drizzle of olive oil to prevent sticking, and set aside.
  3. In a large skillet over medium heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the shrimp to the skillet, season with salt, pepper, and 1 teaspoon of Italian seasoning. Cook for 2-3 minutes on each side until pink and slightly firm. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, pour in the white wine (or chicken broth) and bring to a simmer. Scrape up any flavorful bits from the bottom of the pan. Let it simmer for 2-3 minutes to reduce slightly.
  6. Add the remaining butter, heavy cream, lemon juice, and ½ cup of Parmesan cheese. Stir continuously until the sauce thickens slightly, about 5 minutes. Adjust seasoning with salt and pepper as needed.
  7. Add the cooked pasta to the skillet, tossing to coat evenly in the creamy sauce. Gently fold in the cooked shrimp.
  8. Transfer the pasta mixture to a greased 9×13-inch baking dish. Sprinkle the remaining Parmesan cheese on top.
  9. Bake in the preheated oven for 10-12 minutes, or until the top is golden and bubbling.
  10. Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

Don’t overcook the shrimp to avoid rubbery texture. Use fresh garlic and lemon juice for better flavor. Add a splash of pasta water if the sauce is too thick before baking.
