  • 1 lb ground Italian sausage (sweet or spicy)
  • 1 tablespoon olive oil
  • 1 yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped into bite-sized pieces
  • 2 celery stalks, diced small
  • 4 cups (960 ml) low-sodium chicken broth
  • 1 cup (240 ml) heavy cream
  • 1 cup (100 g) freshly grated Parmesan cheese
  • 2 cups (60 g) baby spinach
  • Salt and pepper to taste
  • Optional: Crusty bread for serving

Instructions

  1. Heat 1 tablespoon of olive oil in a large soup pot over medium heat.
  2. Add the ground Italian sausage and cook, breaking it into small pieces with a wooden spoon. Cook until browned and fully cooked, about 6-8 minutes. Remove the sausage from the pot and set aside.
  3. In the same pot, add the diced onion, minced garlic, chopped carrots, and celery. Sauté for 5-7 minutes until softened, stirring occasionally.
  4. Pour in 4 cups (960 ml) of chicken broth and bring to a gentle simmer.
  5. Lower the heat and stir in 1 cup (240 ml) of heavy cream. Let the soup simmer for 5 minutes to meld the flavors together.
  6. Return the cooked sausage to the pot and add 1 cup (100 g) of freshly grated Parmesan cheese. Stir until the cheese is fully melted and incorporated into the soup.
  7. Finally, toss in 2 cups (60 g) of baby spinach. Stir for 1-2 minutes until the spinach is wilted.
  8. Season with salt and pepper to taste.
  9. Serve hot with crusty bread on the side, if desired.

Notes

Brown the sausage for added flavor, use fresh Parmesan for better melting, and avoid overcooking the spinach to keep it vibrant.
