  • 2 boneless, skinless chicken breasts, sliced into cutlets
  • 8 ounces pasta (penne, fettuccine, or spaghetti)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Slice the chicken breasts into thin cutlets and season generously with salt and pepper on both sides.
  2. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  3. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add chicken cutlets and cook for 3–4 minutes per side, or until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, melt the remaining butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Pour in chicken broth and heavy cream, whisking until smooth.
  5. Stir in freshly grated Parmesan cheese, whisking until melted and fully incorporated. Season with salt and pepper to taste.
  6. Slice the cooked chicken into strips. Add the drained pasta to the skillet, tossing to coat in the sauce. Add reserved pasta water if needed to adjust consistency.
  7. Plate the pasta, top with chicken strips, and garnish with freshly chopped parsley. Serve warm.

Notes

Use fresh Parmesan for the best flavor and texture. Reserve pasta water to adjust sauce consistency. Avoid overcooking the chicken to keep it tender.
