  • 12 oz fettuccine or linguine
  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon Old Bay Seasoning
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, freshly grated
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining and set the cooked pasta aside.
  2. While the pasta cooks, heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat.
  3. Season the shrimp with Old Bay seasoning and a pinch of salt. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the remaining olive oil and butter. Sauté the minced garlic for about 1 minute, until fragrant.
  5. Reduce heat to low and stir in the heavy cream. Let it simmer gently for 2-3 minutes, allowing the flavors to meld.
  6. Add the cooked pasta to the skillet and toss to coat it evenly with the sauce.
  7. Gradually add the reserved pasta water, a few tablespoons at a time, until the sauce reaches your desired consistency.
  8. Stir in the Parmesan cheese and lemon juice. Add salt and pepper to taste.
  9. Return the shrimp to the skillet and gently toss to combine. Cook for 1-2 minutes, just enough to warm the shrimp through.
  10. Garnish with fresh parsley before serving. Serve immediately for the best flavor and texture.
