  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 4 cups whole milk
  • 2 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • Optional toppings: chopped parsley, crumbled bacon, extra cheese

Instructions

  1. Cook the macaroni pasta according to package instructions until al dente. Drain and set aside.
  2. In a large pot, melt 4 tablespoons of butter over medium heat.
  3. Whisk in 4 tablespoons of all-purpose flour and cook for 1-2 minutes, stirring constantly, until it forms a thick paste.
  4. Gradually pour in 4 cups of milk, whisking continuously to prevent lumps. Add 2 cups of chicken broth and continue stirring until the mixture starts to thicken, about 5-7 minutes.
  5. Lower the heat and stir in 2 cups of shredded cheddar cheese and 1/2 cup of grated Parmesan cheese. Keep stirring until the cheese melts completely.
  6. Season the soup with 1 teaspoon of garlic powder, 1/2 teaspoon of paprika, and salt and pepper to taste.
  7. Stir in 1/2 cup of heavy cream for extra richness.
  8. Add the cooked macaroni pasta to the pot and stir well to combine. Let it simmer for another 5 minutes, stirring occasionally.
  9. Adjust the seasoning if needed and serve hot, garnished with chopped parsley, crumbled bacon, or additional cheese.

Notes

Use freshly grated cheese for a smoother texture. Adjust the soup’s thickness by adding more milk or broth. Reheat gently to prevent the cheese from separating.
