  • 2 medium-sized jalapeños, finely diced
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs, beaten
  • 1/3 cup milk (or dairy-free alternative like almond milk)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • Optional garnish: fresh cilantro or sour cream

Instructions

  1. Dice the jalapeños, shred the cheese, and measure out the corn kernels. If using frozen corn, thaw and drain it thoroughly.
  2. In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
  3. In a separate bowl, beat the eggs and stir in the milk.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the corn, jalapeños, and shredded cheddar cheese.
  5. In a skillet, heat about 1/4 inch of vegetable oil over medium heat. Test the oil by dropping a small amount of batter—it should sizzle immediately.
  6. Scoop spoonfuls of batter into the skillet, spacing them apart. Flatten slightly with the back of a spoon. Fry for 2-3 minutes on each side, or until golden brown.
  7. Remove the fritters and place them on a plate lined with paper towels to drain excess oil.
  8. Garnish with fresh cilantro or a dollop of sour cream, and serve immediately.

Notes

For a milder fritter, remove the seeds from the jalapeños. Keep the oil temperature steady to ensure even cooking and crispiness.
