  • 4 chicken thighs, skin-on, bone-in
  • 1 pound baby potatoes, halved
  • 4 cloves garlic, freshly minced
  • 1/2 cup Parmesan cheese, finely grated
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rub the chicken thighs with 1 tablespoon olive oil, salt, pepper, paprika, and Italian seasoning. Set aside.
  3. In a mixing bowl, toss the halved baby potatoes with 2 tablespoons olive oil, minced garlic, salt, and pepper.
  4. Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon olive oil and sear the chicken thighs skin-side down for 3-4 minutes until golden. Flip and sear the other side for 2 minutes. Remove from the skillet and set aside.
  5. Add the seasoned potatoes to the skillet and toss to coat in the leftover chicken juices. Spread them out evenly.
  6. Nestle the chicken thighs among the potatoes. Pour the melted butter over everything, then sprinkle with Parmesan cheese. Bake in the preheated oven for 30 minutes.
  7. Once cooked, remove the skillet from the oven. Sprinkle with fresh parsley before serving.
