Irresistible Garlic Parmesan Chicken and Potatoes Easy Recipe

A one-pan wonder featuring crispy, golden chicken and buttery, garlicky potatoes with a Parmesan crust. Perfect for weeknight dinners or cozy gatherings.

  • 6 bone-in, skin-on chicken thighs
  • 1 pound (450g) baby potatoes, halved
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (50g) grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Fresh parsley or thyme for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (205°C). Line your baking sheet with parchment paper or foil for easy cleanup.
  2. In a small bowl, mix 4 minced garlic cloves, 3 tablespoons of olive oil, 1 teaspoon of smoked paprika, 1 teaspoon of Italian seasoning, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  3. Toss 1 pound (450g) of halved baby potatoes with half of the garlic mixture. Make sure the potatoes are evenly coated. Spread them out on one side of the baking sheet.
  4. Rub the remaining garlic mixture over 6 bone-in, skin-on chicken thighs. Place the chicken skin-side up on the other side of the baking sheet.
  5. Sprinkle 1/2 cup (50g) of grated Parmesan cheese evenly over the chicken and potatoes.
  6. Dot 2 tablespoons of unsalted butter over the potatoes for extra richness.
  7. Bake for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and tender.
  8. For extra crispiness, broil the chicken and potatoes for 2-3 minutes at the end. Keep an eye on it to avoid burning.
  9. Garnish with freshly chopped parsley or thyme before serving.

Notes

For extra crispy chicken skin, pat it dry before seasoning. Broil the dish for a few minutes at the end for a golden Parmesan crust.
