  • Two 15 oz cans of white beans (cannellini or Great Northern), drained and rinsed
  • 4 cups chicken broth (low sodium preferred)
  • One 4 oz can of diced green chiles (mild or hot, depending on preference)
  • One small onion, finely diced
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 8 oz cream cheese, softened and cubed
  • 1 cup shredded Monterey Jack or Pepper Jack cheese (optional)
  • Fresh cilantro, chopped (for garnish)
  • 1 tablespoon lime juice, freshly squeezed
  • Optional toppings: diced avocado, tortilla chips, sour cream, jalapeños

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Add the drained beans, chicken broth, green chiles, diced onion, minced garlic, cumin, oregano, and chili powder over the chicken. Stir gently to combine.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easily shreds with a fork.
  4. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the pot.
  5. Add the cubed cream cheese and shredded cheese to the slow cooker. Stir until fully melted and incorporated.
  6. Let the chili cook for another 15-20 minutes on low to meld the flavors. Stir in the fresh lime juice.
  7. Serve hot, garnished with cilantro and your choice of toppings like diced avocado, tortilla chips, or jalapeños.
